1: Preheat your oven to 400 degrees. 2: On a baking sheet or cast iron skillet, place all the vegetables. 3: Cover the vegetables in olive oil and seasonings. 4: Bake in the oven for 40 minutes. 5: Place the roasted vegetables in a blender, including any juice that came out during roasting. 6: Boil and salt a pot of water and cook your pasta according to package directions. 7: Add the blended sauce and drizzle coconut cream into the pasta, stirring well. 8: Optionally, add in cooked meat such as Italian sausage and red pepper flakes. 9: Combine pasta with sauce until evenly coated. 10: Plate and garnish with Parmesan and fresh basil before serving.
