A simple and delicious recipe for make-ahead breakfast sandwiches, perfect for meal prep with eggs, cottage cheese, sausage, and your choice of toppings.
Preheat oven to 325 degrees F. Whisk or blend eggs and cottage cheese together. (A blender makes this very easy!) You can also add spinach or other veggies here. Sprinkle in some shredded cheese. Place the egg mixture on a greased or lined baking sheet and bake for 30 minutes. When the eggs are halfway done (around 15 minutes in), place frozen sausages in the oven to cook alongside.
Assemble sandwich: Take an English muffin or bagel thin, add a cooked egg patty, a sausage patty, a slice of cheese, and your chosen optional sauce (avocado, hot honey, or chipotle mayo).
Storage/Reheat: Store assembled sandwiches in the fridge for up to 5 days, or freeze for longer periods. To reheat from the fridge, microwave for 60 seconds or pop in the air fryer for a couple of minutes. To reheat from frozen, microwave for 1:30-2 minutes, or place in the air fryer until thawed to preference. Enjoy!
