What you need

cup brown rice
oz ground beef

red bell pepper

cilantro
tsp spice mix
Instructions
1: Preheat the oven to 350°F (convection). Remove the stem and top of the pepper and scoop out the seeds. Add the pepper to a plate and microwave for 3 minutes on high until it has softened. 2: In the meantime, rinse the rice prior to cooking. Add to a pot of lightly salted water and cook according to the instructions on the packet. 3: Cook the ground beef on the stove top. Heat a pan with the oil over medium-high heat and combine the beef with fajita spice until it is cooked through. 4: Spoon the beef, cilantro, and rice into the pepper. Add it to a lined baking sheet and bake for 10-15 minutes before serving. If there is any filling left over you can eat it on the side.View original recipe
