A delicious low-carb, high-protein dinner option made with spaghetti squash, Italian sausage, marinara, goat cheese, and mozzarella. This dish is filling and perfect for weeknight meals.
1: Cut spaghetti squash in half, lengthwise.
2: Rub oil, salt, and pepper into both halves of the squash and place face down on a foil-lined baking sheet.
3: Cook spaghetti squash in the oven at 400 degrees for 40 minutes, or in the air fryer for 20.
4: While the squash cooks, add the Italian sausage to a skillet on medium heat. Once the sausage starts browning, add the marinara sauce and goat cheese.
5: Once the squash has cooled, scoop spaghetti squash into a hand towel and ring out excess liquid over the sink. Add squash to the sauce mixture in the skillet.
6: Cook until combined, then scoop the entire mixture back into the hallowed-out spaghetti squash halves and top with mozzarella.
7: Broil the halves for 2 minutes, watching it closely, or until the cheese has melted over top.
