The viral “Jennifer Aniston” salad is indeed worth the hype! We ate this with dinner every night this week- chicken thighs, burgers, tuna melts, etc. It is so nourishing and honestly gets better the longer it sits in the fridge.
If not already cooked, prepare 1 cup of quinoa according to package instructions. Chop the 3 baby cucumbers, 1/2 red onion, 1/3 cup parsley, and 1/3 cup mint. Rinse one can of chickpeas. In a large bowl, combine the chopped cucumbers, red onion, parsley, mint, rinsed chickpeas, cooked quinoa, and 1 cup of crumbled feta. For the Dijon honey dressing, whisk together 1/4 cup olive oil, 2 tablespoons apple cider vinegar, 1 tablespoon honey, 1 tablespoon Dijon mustard, and salt and pepper to taste. Pour the dressing over the salad and toss to combine well.
