A delicious Halloumi Harvest Salad with roasted sweet potato, crispy brussel sprouts, sweet honey crisp apple, and protein-packed chickpeas, finished with grilled halloumi and a homemade Honey Dijon Vinaigrette.

What you need

tbsp honey

tsp black pepper

bunch brussel sprouts

Instructions
1: Preheat your oven or air fryer to 400 degrees. 2: Season the sweet potato and chickpeas with olive oil, salt, pepper, and paprika. 3: Roast sweet potato and chickpeas for 15 minutes in the air fryer, or 30-40 minutes in the oven. 4: Assemble the salad by processing brussel sprouts in a food processor if not already shaved. 5: Slice halloumi and grill on stovetop with a little oil, flipping once it is golden brown. 6: Finely cut up the apple. 7: Toss all ingredients together in a bowl with your favorite dressing.View original recipe
