What you need

oz parmesan
tsp oregano

cup pasta

zucchini

bunch fresh basil
tsp salt

tsp pepper
tsp italian seasoning

red pepper

yellow onion

tbsp coconut cream

carrot

roma tomato

Instructions
1: Preheat your oven to 400 degrees. 2: On a baking sheet or cast iron skillet, place all the vegetables. 3: Cover the vegetables in olive oil and seasonings. 4: Bake in the oven for 40 minutes. 5: Place the roasted vegetables in a blender, including any juice that came out during roasting. 6: Boil and salt a pot of water and cook your pasta according to package directions. 7: Add the blended sauce and drizzle coconut cream into the pasta, stirring well. 8: Optionally, add in cooked meat such as Italian sausage and red pepper flakes. 9: Combine pasta with sauce until evenly coated. 10: Plate and garnish with Parmesan and fresh basil before serving.View original recipe
