This egg salad is a quick and easy dish perfect for busy mornings. With hard-boiled eggs mixed with mayonnaise, dijon mustard, and fresh herbs, it's a delicious and versatile meal. You can serve it on sourdough bread or over a bed of lettuce or sweet potatoes.

tbsp dijon mustard

salt

tsp fresh dill

Instructions
1: Bring 8 eggs and a pot of water to a boil on your stovetop. 2: Once boiling, turn off heat and let the eggs cook in water for another 9 minutes. 3: Remove from stove and place eggs in an ice bath. 4: Crack eggs and separate yolks from the whites. 5: In the bowl of yolks, add in mayonnaise, dijon mustard, and salt and pepper. Combine by mashing together. 6: Separately, chop the egg whites up finely. 7: Add in all remaining ingredients to the mashed yolk mixture, and combine well. 8: Serve on your favorite sourdough bread, or over a bed of lettuce or sweet potatoes.View original recipe
