What you need

medjool dates

tsp vanilla bean paste

cup protein powder

tbsp coconut oil

cup coconut milk

cup chocolate chips

tbsp flax seed

tsp coarse sea salt

cup gluten-free flour

cup water
Instructions
1: Preheat oven to 350°F. 2: Mix the shortbread layer ingredients and place in lined muffin tin, bake for 15 minutes until golden. 3: Pit the dates and place them in a bowl. Pour boiling water on them and let sit for 10 minutes. 4: Place softened dates in the blender with coconut milk and vanilla, adding more milk if needed. 5: Place a big spoonful of caramel on top of the shortbread layer, freeze for at least 4 hours. 6: Combine chocolate chips and coconut oil, microwave for 30-second intervals until melted. 7: Dunk the shortbread/caramel cups into the chocolate and top with sea salt. 8: Freeze again for 30 minutes to set. 9: Enjoy!View original recipe
