Instructions
1: In a small bowl, mix the Greek yogurt, protein powder, chia seeds, and vanilla extract. Stir well to combine. 2: In a blender or food processor, puree the fresh raspberries until smooth. 3: In a glass or bowl, start layering the parfait. Begin with a layer of the Greek yogurt mixture. 4: Add a layer of the raspberry puree on top of the yogurt. 5: Repeat the layers with the remaining yogurt and raspberry puree. 6: Preheat the oven to 400°F/200° C and line a sheet pan with parchment paper. 7: Squeeze grated zucchini over a bowl to remove excess moisture. 8: Use your hands to form equal balls and drop them onto the prepared sheet pan. 9: Bake for 10-14 minutes or until nicely golden brown.
